Loaded with herbs, jalapeño and lime zest, this chimichurri chicken makes a tasty taco filling but can also be served on a bed of rice.
INGREDIENTS
• 2 cups shredded rotisserie chicken breasts
• 1 jalapeño pepper, seeded and diced
• 2 tbsp finely chopped fresh parsley
• 2 tbsp finely chopped fresh basil
• 1 tbsp concentrated chicken bouillon paste or 1 chicken bouillon cube
• 1 tbsp Dijon mustard
• 2 cloves garlic, minced
• 1 tsp lime zest
• 1/2 tsp dried oregano
• 1/4 tsp salt and pepper
INSTRUCTIONS
1. Toss together chicken, jalapeño, parsley, basil, bouillon, mustard, garlic, lime zest, oregano, salt and pepper.
2. Add chicken mixture to Microwavable Meal Prep Bags. Vacuum seal in bag as per FoodSaver® vacuum appliance guidelines. Freeze for up to 3 months.
3. When ready to cook, place bag printed side down or standing up in microwave oven. Microwave for 7 to 8 minutes. (While cooking, the bag may slowly inflate and deflate. A vent in the bag will allow steam to escape and a slight whistling sound may be heard.)
4.Wait for 30 to 60 seconds before opening carefully.
Tips
• If desired, drizzle with olive oil before serving.
• Serve in warm tortillas with guacamole, shredded coleslaw mix and crumbled feta cheese.
